Hello, I am Benjamin Rubio. I am a registered nutritionist and certified diabetes educator in the El Paso, TX region. Prior to becoming a nutritionist, I completed a Biology degree at New Mexico State University in Las Cruces, NM. I have also completed a Master of Public Health degree with an emphasis in nutrition from the University of Texas, Austin. Currently, I am pursuing my doctoral degree at the University of Texas at El Paso “UTEP” in Interdisciplinary Health Sciences.
I have always had a passion for helping people make healthier choices while still enjoying what they eat. I have been able to work at the local health department as part of a grant-funded program called EatWell! El Paso. Here I developed and revised both children and adult menus to meet healthier guidelines.
I have experience as a pediatric dietitian educating children, teens, and their families in areas such as nutrition and diabetes. I currently conduct research in the areas of nutrition and obesity to develop evidenced-based cooking programs
I believe that our region has the opportunity to make healthy dietary choices without sacrificing flavor in the food that we eat. It is my desire to work with families in the El Paso region to make those dietary choices both achievable and sustainable.
